In Hot Oil

This is a great tip I saw on the Rachel Ray Show:

How can you tell when the frying oil you are heating up is hot enough? Place the handle end of a wooden spoon into the middle of your pan. If the little bubbles of oil rapidly dance around your handle, the oil is ready! I've tried it and it really works.

That sounds so neat! I would try it but i don't have a wooden spoon...i love them but have not figured out how to keep them clean? Mine gets all icky looking. Got any tips for that?

I've been wanting to try it out ever since I saw her do that, but I always forget until after I'm done cooking. lol Thanks for the reminder. Just a few more times and it may actually become a part of my cooking process!!

I've done this and it really does work! Another trick is to put a single kernel of unpopped popcorn in the skillet. When it pops, you've hit 350 degrees, which is a good frying temp!
