A few weeks ago one of my friends made me a yummy Key Lime Pie. Turns out it was a Weight Watchers recipe! This pie turns out light and fluffy and doesn't taste low calorie at all. It is a perfect summer dessert. The best part is that you can change the flavor of the pie just by using a different flavor gelatin & yogurt!Key Lime Pie
Makes 8 servings; 3 points each
1 box (0.3 oz) sugar-free lime-flavor gelatin
1/4 cup boiling water
2 containers (8 oz each) key lime pie-flavor light yogurt
1 container (8 oz) frozen fat-free whipped topping, thawed
1 prepared 9" reduced-fat graham cracker pie crust
1. In large bowl, dissolve gelatin in boiling water. Use wire whisk to stir in yogurt. With wooden spoon, fold in whipped topping.
2. Transfer mixture to prepared crust. Refrigerate over night (or at least 2 hours)

I have been making this for several years, and I love it. My kids do, too.
I think the pudding/Cool Whip pies are really good, too, when you are watching calories. If you do the sugar-free pudding, light Cool Whip and Reduced Fat crust, they're pretty light.
