Wordless Wednesday ~ Remembering

Last week I blogged about losing our family pet of 11 years.
Yesterday, I stopped by the vet's office to pick up a special memorial they created for us.
Isn't it wonderful? It is a plaster cast of Sailor's paw print with his name stamped along the side (hard to see in the picture).

Tackle it Tuesday ~ Body Wash

Today I am tackling a review. I was recently asked to try the new Evenly Gorgeous Exfoliating Body Wash by Caress and then blog about my experience. Fashion expert, Carson Kressley and Kim Kardashian have teamed up with Caress to show women the season's hottest styles and how to flaunt them with beautiful skin as the centerpiece of their look.
I love using body washes in the shower so I was excited to try a new product. According to the bottle, the "Evenly Gorgeous Body Wash with burnt brown sugar and karite butter, gently exfoliates and lusciously moisturizes to reveal beautifully even-toned skin." After using the product for a week, here are my observations:
  1. The product smells decadent - it smells like homemade baked goods without the calories!
  2. It is very gentle. The wash is not overly harsh or grainy like some exfoliating body washes I have used in the past.
  3. My skin feels really soft and moisturized without feeling greasy. I find that my skin feels soft all day.
  4. It doesn't leave a residue in the bottom of my shower. Some body washes I have used make my skin feel great, but leave a slick residue in the shower.
  5. While my skin feels softer, I really don't see that my skin is more "beautifully even-toned."

Motivated To Lose

Back in September, I blogged about my new commitment to Weight Watchers. Ha! That little dieting foray lasted about a week. I don't know about you, but I really have to be in the right frame of mind to start a diet. I can't be wishy-washy or be half committed or think that I can rely on someone else (like my BFF Karyn) to motivate me. I just have to be in the mood to make a plan and stick with it.

Motivated by The Masked Mommy, three weeks ago I secretly started counting my Weight Watchers points. I didn't even mention it to my husband - I always find that I tend to stop after I've made a big deal about it. Now, 3 weeks later, I have lost 10.6 pounds of the 62 pounds I would like to lose.

The best thing about this time around is that I am not stressed about it. If I go out to a restaurant and go over my daily points, so what. I just start fresh the next day and look forward. I also haven't put any pressure on myself to lose it all by a certain date or for an event. The weight will come off when it comes off!

One of my biggest inspirations so far has been Roni's Weigh Progression pictures. I can relate so well to Roni because we are the same height and started Weight Watchers at about the same weight. We both have blonde hair and blue eyes and have similar frames. So, when I look at her amazing results, I can actually visualize my weight loss!

Some of my favorite new foods I have discovered (I would eat them even if I wasn't on a diet) are:

Laughing Cow Light cheese wedge spread over 3 Wasa Crisp'n Light crackers. So yummy and not at all diet tasting, even though it is only 2 points!Arnold Sandwich Thins are so delicious and only 1 point each! I make a sandwich with them everyday, but I've also read of people using them for a low-cal mini pizza base and using spray butter and garlic salt for a low point & tasty garlic toast.

I promise not to blog about Weight Watchers every day, but today I was just really excited to share my small success!

BFF: Best Friend Friday ~ Red Velvet Cake

TGIF! What a week. At least two of my boys have been sick all week and I have been dizzy for almost two months. At first I thought the dizziness (which gets worse when I bend down) was God telling my to get a maid. Then I decided it was sinus related- horrid pollen this year and NO rain. I feel like I am going to spin out of my chair right now. DH is going to have to take me for a sinus x-ray this morning. It has gotten ridiculous!

Since I have nothing planned for BFF, I am going to share my mommy’s Red Velvet Cake recipe- she got it from someone at work in 1968. I freely admit I am a Red Velvet snob. No one’s Red Velvet (not even Southern Living) is as good as this recipe. It is not a one bowl recipe, but the extra dishes are worth the trouble. I use three 9” cake pans (mine are kind of shallow-about 3” high). I see every Valentine’s Day people make cupcakes with Red Velvet batter, so it must be possible…I have used blue, green or purple food coloring for different holidays or someone’s favorite color instead of the red. Just do not use more than the half ounce or you start to taste the food coloring.

Red Velvet Cake

1 ½ Cup Oil
2 Cups Sugar
2 Eggs
2 Tablespoons Cocoa
½ Ounce Red Food Coloring
1 Teaspoon Vinegar
1 Teaspoon Vanilla
1 Teaspoon Salt
½ Teaspoon Baking Soda
2 ½ Cups Flour
1 Cup Buttermilk

Frosting

8 Ounces Cream Cheese (do not use fat free)
1 Stick Butter
1 Pound Powered Sugar
1 Teaspoon Vanilla
Drops of Milk to Smooth


Cream oil and sugar; add eggs and beat well
Mix cocoa, red coloring, vinegar and vanilla
Mix with oil mixture; add salt and baking soda
Add flour and buttermilk
Bake at 350 degrees for 35 minutes. Toothpick test works.
Let cool and ice with cream cheese frosting.

Does Anyone Else...

...have a problem with this magazine cover?
I'm not a prude, but I am conservative (morally & politically). I just don't think it is appropriate that the Leader in Chief should be on the cover of a magazine dressed (or not dressed, as the case may be) like this.

This look is great for the beach and I have no problem with a spread inside the magazine, but I don't want to see it staring me down at the grocery store check-out aisle. I feel like it is disrespectful to the Presidency.

Just my two cents. I am really curious about how the rest of you feel, so leave me a comment!

Goodbye, Old Friend

On Saturday, we had to put our sweet dog Sailor to sleep. Sailor just had too many medical issues and it was time to end his suffering.

He was a part of our family for 11 years. My husband and son are especially taking the news hard. Even though I complained about his shedding and sometimes stinky smell, I really did love him.

Sailor was the sweetest, gentlest dog I'd ever met and he is missed.

BFF: Best Friend Friday ~ Honey Baked Ham

We get a Honey Baked Ham for Thanksgiving, Christmas and Easter dinners, and our local store is always crazy busy. On Good Friday, Zach and I got in a line down the sidewalk to wait to purchase a ham. They had an Easter Bunny handing out turkey samples and for the children, candy filled eggs.

Once inside the store, they had half sandwiches, chips and salsa, and pieces of coconut cake for samples. There was also a large catering tray full of jelly beans for a guessing contest. Zach asked if he could fill one out with my name and I told him he could. Shy child that he is, he held his paper up high and announced to the whole store, “here is the winning number!” Twenty-five minutes after getting in line we left with our 12 pound ham-as always, a great experience at the Honey Baked Ham store.
On Monday, the phone rings and the Caller ID says, “Honey Baked Ham,” I start wondering if I left something in the store as I answer the phone. The lady on the other end is saying, “Is this Karyn? You won the ham! And do you want the jelly beans?” Now what kid would not want almost 4000 pieces of candy? Zach guessed 3984 jelly beans and the container had 3996. The store (and I) could not believe how close Zach guessed. I had to wait almost five hours until Zach came home from school to tell him and he was so excited.
The manager, Stacey, was so nice and we chatted while Zach acted like he had eaten 3996 jelly beans. I mentioned to Stacey how much we liked our Easter ham and Zach told her we had some leftovers, so she offered for us to get a ham at a later date- how nice was that? I heart Honey Baked Ham because they really have the best tasting ham and great customer service!

Tackle it Tuesday

The big tackle for this week was to get this huge TV out of the master bedroom and into the kids' playroom. Then we moved the Wii from the family room tv to this one. I've been wanting to get the Wii out of the family room for a while now, mainly because I was tired of listening to the kids playing video games and not having the television when I wanted it.
Now the kids can play Wii and I can close the door!

My laundry is all washed, but now I just have to fold it and put it all away! So many tackles, so little desire to do them!

So Hard...

After a week of Spring Break, it was SO hard to get back into the swing of things today. No one wanted to get up for school and we are all walking around like zombies.

Our air conditioner decided to stop working on Friday. I know this wouldn't be that big of deal for some parts of the country right now, but here in sunny Florida, we have a high of 88° today! Anyway, $2,000 later, we have our air back up and running.

We had a nice, quiet Easter. My mom & grandmother came over for lunch and then we played Disney's Scene It Game. These are the pretty flowers my mom brought over.


The most exciting thing going on today is a dental cleaning for me and Coco! Hopefully, my week will pick up a little!

Easter Sweets

We had a fun filled family day today. First, we had lunch at one of our favorite local hang-outs - -------------------------------------------------------------
Then we went to see the Hannah Montana movie. It was cute and my daughter especially loved it. She has been counting down the days until the movie opened all week!

Lunch Conversation

Today is the first day of Spring Break. I really like to think of it more as my mental preparation for Summer Vacation. I love my kids, but having them home 24/7 - not so much!

As we sat down to a yummy lunch of grilled cheese sandwiches, the kids starting arguing non-stop. You name it, they bickered about it. Lulu thought it was funny to make herself burp - over and over and over again. After each burp, Coco told her to stop. Finally, Lulu looked over to Coco and yelled, "You are NOT the boss of my body!"

OK, I HAD to laugh at that one! I thought it was really clever and Coco had nothing to say back. Ah, the fun of Spring Break begins!

BFF: Best Friend Friday ~ Spring Decorations

My family thinks I am crazy to do so much Easter/Spring decorating, but we all enjoy how the house looks, especially when we have a big family Easter dinner.This is the living room table-I love Winnie the Pooh!

My mom got me the nail wreath a few years ago.
The top of the TV is pretty in pink-my favorite color.
The chairs in the den get some Easter pillows.
Half wall in foyer is all bunnies and carrots.
Top of the desk in the den, I cannot believe I have not killed the orchid yet. I put some gel clings from Joann’s on the candle for Easter.
The buffet in the dining room has lots of Spring-y birds and nests.
I love sparkly things and this green glitter sign announces Spring over my china cabinet.

Wasted Food

This graphic really says it all - Americans waste so much food. This amounts to 1 pound of wasted food each day for every adult and child in our country. With our country (and world, for that matter) in a recession, think of how much money in food gets thrown away each day.

Chili Pie

I tried this recipe for the first time last night and it was pretty tasty - and very easy to make! The recipe comes from April's All You magazine. According to the recipe, this dinner serves 6 and costs $1.46 per serving ($8.76 total). I had all of the ingredients on hand and most were purchased on sale with coupons. I figure this recipe cost me about $4.00 to make. Add a side salad and you have a filling and economical meal.

Chili Pie

1 tb vegetable oil
1 small onion, finely chopped
2 gloves garlic, finely chopped
1 lb extra lean ground beef (or turkey)
1 1/2 tb chili powder
1 14 1/2-oz can diced tomatoes
Salt
1 15-oz can kidney beans, rinsed & drained
1 8-oz box corn bread mix
1 large egg
1/3 cup milk
1 cup grated sharp Cheddar

1. Preheat oven to 400°F. Warm vegetable oil in a skillet over medium heat. Add onion & garlic; cook, stirring, until softened, about 3 minutes.

2. Add ground beef and cook, stirring to break up meat, until no longer pink, about 5 minutes. Stir in chili powder, tomatoes & 1/2 tsp salt; cook mixture, stirring occasionally, until liquid is almost evaporated, another 5 minutes. Stir in beans and season to taste.

3. While chili is cooking, combine corn bread mix, egg, milk and cheese. Scrape chili into 9-inch greased glass pie plate. Spread batter over chili.

4. Bake until golden, 15 to 20 minutes. Let stand 5 minutes and serve.
